Harry, instead of watching Hermione as she dug for the money, watched the two suspicious men and when they drew their wands, he mirrored the action without really thinking about it; it was more instinct at this point in his life. The spell from the first one landed where Hermione's head had been seconds before and Harry's response was a stunner that knocked the attacker unconscious and left the other man completely baffled since neither Ron or Hermione had reacted in anyway, wand-wise.
Confused or not, he shot a length of black ropes at Ron who apparently seemed the more likely of the two to have knocked out his companion.

As soon as the spells were cast, Ron jumped to his feet and dodged the ropes that were aiming for him, by quickly ducking underneath the table and pulling Hermione down with him. He crawled on his hands and knees from under the table and stood and fired a stunning spell towards the two men, hoping that it gave them more time."Follow me!" Ron could see an exit in the back of the cafe, and he hoped the three of them could make it out in time. He didn't really think about apparating, because he wasn't good at side-along apparition. Hermione was the one that was skilled with that. Besides, he was just focused on trying to get out, and he hoped his friends would follow him.
He turned and looked over his shoulder to see what was happening and realized that the two men were still casting their own spells. The cafe's counter seemed to provide an excellent shield, and he ducked behind it and started to throw some more stunning spells at the two men. "Stupefy!" he yelled, and sparks flew from his wand, and he watched, hoping that they would make contact.
